Enoki mushrooms, spinach, corn with nutritional yeast from The Hive - Bulk Foods,, and tomatoes cooked with basil leaves from a pruning session on my balcony. Sausage from My Plant Deli and a toasted slice of @fresco_grano bread coated with a tablespoon of Udo’s Oil from @bhbhealth to replace butter.
A breakfast as luxurious as this actually doesn’t need that much time... given that there’s a tiny bit of basic prep. Like cooking the corn the night before and de-frosting the sausages in the fridge overnight.
All veggies and sausages were cooked at different corners of the same pan, so I didn’t need to tend to them one by one. The corn was quickly pan-fried to add some heat before being hand-coated with salt and nooch. Altogether took 20 minutes to serve 2 people, and heaps cheaper than paying for a vegan breakfast plate in a cafe.
