From time to time I make ‘roast salads’. This one has Choy Tam (Cabbage Shoots or popularly known in Malaysia as Baby Kailan), Japanese Pumpkin in Soysauce and Cinnamon, and Chickpeas stirred with some leftover Walnut Basil Pesto I made a few days earlier. I took a first bite of those crispy, crunchy leaves, that robust pesto, that buttery pumpkin, and for the remainder of the meal sat on my sofa in utter disbelief that the best food in the world was entering my mouth.
