Starting the day with homemade granola AND homemade soymilk invites all sorts of happy. 🌞🌸🦋 In a country where I have to pay through my nose for fresh berries, I’m glad I can get them in dried form - and all package free! 🍓 With the exception of the desiccated coconut and Gula Melaka, I bought all of the ingredients for this recipe from @thehivebulkfoods. The soymilk, I’ll share another day!⠀ ⠀ MIXED BERRY GRANOLA⠀ Makes about 1 kg⠀ ⠀ INGREDIENTS⠀ 100g dried strawberries ⠀ 100g dried mulberries⠀ 100g dried blueberries ⠀ 5 cups rolled oats⠀ 1 cup desiccated coconut ⠀ 1/2 cup pumpkin seeds⠀ 75g Gula Melaka / brown sugar ⠀ 1/2 tsp salt ⠀ 1/4 cup coconut oil⠀ ⠀ METHOD⠀ Slice dried strawberries with a knife or scissors. ⠀ Bake the following in the oven, turning ingredients with a ladle every 7-8 mins:⠀ Pumpkin seeds - 170 degrees Celsius for 25 mins⠀ Coconut - 170 degrees Celsius for 15-20 mins or until it browns ⠀ Rolled oats - 180 degrees Celsius for 30 mins ⠀ Allow each ingredient to cool for 20-30 minutes before stirring the coconut and oats together in a large mixing bowl.⠀ In a pan, melt the Gula Melaka, salt and oil on low to medium heat until it becomes a thin fluid (it will not join together. That’s okay.)⠀ Remove from heat and slowly pour liquid over oat mix as you slowly stir with a ladle. Be very mindful of the hot oil. ⠀ Place mixture into the oven again and bake at 180 degrees for another 15 minutes to allow the coconut oil and sugar to integrate into the mixture.⠀ Remove from oven, transfer to a mixing oven and stir in in the 3 types of berries and pumpkin seeds. Allow to cool for at least 30 minutes before transferring to an airtight container.⠀ ⠀ Will stay fresh for up to 2 weeks, and in the fridge for much longer! ⠀
