When your soba’s so big! With fried tofu, edamame, some homemade pesto dressing and leftover bean dip. When the partner asked for lunch, I made enough salad for two and served it to him as a little eating challenge (without telling him of course). Fifteen minutes later it was all gone. This guy is intense!
Noodle salad is great cross between east and west, and is nutritious as much as it is filling. I’ve also used beehoon (vermicelli), glass noodles and Thai flat rice noodles.
