Today I figured it was high time I understand the hype about chickpea omelettes. What a fascinating dish! Kind of like a light and fluffy savoury pancake with the crispy edges of an omelette. It doesn’t taste like egg... actually, from my experience, aside from JUST nothing really comes anywhere close to egg. But for a yummy protein-packed dish made with similar ease, it’s all I wanted for a laidback morning at home. I got the recipe for Fork and Beans... look it up (and big up to the brilliant Cara)! I doubled up the onion and garlic powder portions and served mine with a sautéed Brazilian spinach and a garlic-basil-olive oil mix toasted on homemade buns. Not in this picture is fried tomatoes, which I added later.
