As part of my Healing Diets studies, I’m transitioning from my papaya cleanse to a special diet for a couple more days which helps to cleanse the digestive system. This morning was a ‘soaked’ breakfast of nuts and buckwheat, with a drizzle of blackstrap molasses. Soaking helps to break down anti-nutrients (explained in my previous post) and improves digestibility and bioavailability of nutrients. Overnight buckwheat is a fantastic alternative to overnight oats. It’s high in protein, gluten-free, and has a neutral nutty taste. Soak raw hulled buckwheat overnight in water, in the morning drain and rinse the buckwheat if you prefer it to be a little less gooey. Add plant-based milk along with sweetener of choice, fruit, nuts, cinnamon, anything! If you want a smoother, porridge-like texture, put the soaked buckwheat in a blender with a splash of plant-based milk - whizz for a few seconds and it’s ready! I like having it crunchy and turning it into porridge in my mouth 😜
