A quick lunch today of leftover pumpkin okra roast that my partner made for himself a few days back, and homemade falafels that I always have a stash of in my freezer. The garlic sauce is made of a can of white beans I found right at the back of my pantry - because desperate times calls for desperate measures! If you guys need it too:⠀ ⠀ EASY WHITE BEAN GARLIC SAUCE⠀ ⠀ 1 can of white beans, drained⠀ 2 cloves garlic⠀ 1/2 tsp salt⠀ 1/2 cup water⠀ 2 tbsp oil⠀ 1.5 tsp apple cider vinegar⠀ ⠀ Blend all ingredients until smooth.⠀
