Last week I conducted my first virtual cooking class for @maxis employees all working remotely from their homes. Sometimes with these live sessions it feels like I’m just entertaining myself, but when we wrapped up suddenly all these voices erupted from my laptop to say thank you! This is the first of four express meals I’m demonstrating: Sambal Aubergine with Ulam Couscous. Topped with fried shallots, freshly grated coconut, with toasted seeds and sprouts on the side.
