Was in the mood for Vietnamese Noodle Salad with Rice Paper Spring Rolls (Bún Chã Giò) and the first attempt wasn’t so bad! 🇻🇳 ⠀ ⠀ Used brown rice vermicelli and whatever I had in the kitchen for a makeshift fish sauceless dressing: soy sauce, brown rice vinegar, fresh lime juice, Thai chili dipping sauce, coconut sugar. The fresh herbs added were Vietnamese coriander (daun kesum), cilantro and Thai basil.⠀ ⠀ This dish was a great way to use some small-sized rice paper that has been in the fridge forever... it still looks like the packet has never been touched. Does it re-generate on it own? 🤔 The spring rolls were made with simple ingredients. If you don’t have rice paper, wheat-based spring roll paper works too. If you don’t have pre-shredded black fungus, you can just cut whole fungus into shreds with a pair of scissors.⠀ ⠀ TURNIP BLACK FUNGUS RICE PAPER SPRING ROLLS⠀ ⠀ 🌱 120g turnip peeled and shredded⠀ 🌱 10g pre-shredded dehydrated black fungus boiled in water for 5 minutes ⠀ 🌱 1 large sprig of green spring onion ⠀ 🌱 2 cloves garlic, chopped finely ⠀ 🌱 1.5-2 tbsp soy sauce⠀ 🌱 1 tbsp + 1/4 cup cooking oil⠀ 🌱 rice paper plus a large bowl of warm water for re-hydrating⠀ ⠀ Heat 1 tbsp oil in a small frying pan. Fry garlic until golden. Put in turnip, black fungus and spring onion, then pour soy sauce over the turnip. Fry all for 1 minute or until the turnip turns lumpy and an even brown and shrivels. Remove from heat.⠀ ⠀ Take one sheet of rice paper, dip into water bowl and lay it out on a flat clean surface. Take about a tablespoon of the turnip mixture and roll it into the rice paper. There are lots of YouTube videos showing you how to do this! Leave roll aside on a moistened surface. Repeat until the turnip mixture is finished. Do not allow the finished rolls to touch each other, they will stick!⠀ ⠀ Heat up 1/4 cup oil in a frying pan. Add more oil if you need more to completely coat the bottom of your pan with a few millimeters of it. ⠀ Fry spring rolls evenly on all sides until golden brown. This takes about 2 minutes each roll. ⠀ Serve immediately.⠀ ⠀ Makes about 10 small rolls.
