Just learned that the fate of leftover rice doesn’t always have to be fried rice! This brown / red rice mix was refrigerated but still soft as it was cooked on the same day. I tossed it with olive oil and salt, black and kalamata olives, capers, bell pepper, cucumber and sprinkled it with cilantro, almond slivers and squeezed lime. I added chickpeas later to amp up the protein. It was a most wholesome, delicious dinner., and had expanded my perspective of what it means to “Makan nasi” (eat rice)!
