Nutrition is colorful! 🌈The participants of @pbh4all’s Health Activate Program have made it halfway through their 14-day challenge of being 100% plant-based, and I’ve had the privilege of experiencing the program meals for a day. For lunch was ‘Nasi Kerabu’ with Tofu and Tempeh, Grilled Eggplant, fresh local herbs (‘Ulam‘) and Sambal. For dinner was Deconstructed Mixed Veggie Dhall with Sweet and Spicy Pumpkin. They were absolutely scrumptious, but easy for me to say for someone who’s used to eating food like this. Most of the participants haven’t! I can only imagine the changes that are happening in their bodies, and the obstacles they may have to overcome to stay committed to the program. I’m so glad they are doing this for themselves and wishing them the best in their second week!
