It has been a while since I’ve made Cashew Alfredo. If everyone realized how easy it was, we’d ALL be doing it! There are recipes for it all over the internet. I had button mushrooms sitting in the fridge for over a week. Considering they were already old when I got them (I found them at the supermarket clearance corner), the fact that they were still edible was quite miraculous.
Smokey Tempeh is always a winner on top of pasta, recipe at davinadavegan.com. I found an old onion that was mushy to the touch, but it had grown some beautiful shoots, so at least those went to good use. All in all this meal cost around RM12 for two and took less than half an hour to put together. The more times you spend in the kitchen, the more ways you find of getting things done faster!
