I launched my Aidilfitri Dessert Collection on the same day that Elina Gives launched her ‘Malaysian Flavours’ e-cookbook. Since then, I’ve bought her book and she has made an order of my desserts! I love how friends of the local plant-based community stay innovative and supportive of each other. Here is my recreation of Elina’s ‘Lontong’ (coconut veggie soup) and ‘Tauhu Goreng’ (fried tofu). A meal made complete with a festive food called ‘lemang’ which is unique to this part of the world: glutinous rice and coconut milk cooked with banana leaves inside bamboo sticks over an open fire. Can you name a carb more epic? I’ll wait.
