How many leftovers would I like in my lunch? YES.
Potato, Basmati Rice, Corn, Zucchini, Carrot, Black Beans, Tomato Purée, each from different meals made throughout the week, dumped into a pot with some cumin powder, nutritional yeast, a dash of hot chipotle sauce and a squeeze of lime. A winner of a meal! Like Malaysia, no matter what we add to the pot, it still manages to turn out great... but only if we want it to. 😉
