Going back to simple things is what my Healing Diets studies encourages. With every experiential assignment I learn more and more about making use of fresh, local, organic produce just the way they are.
For my last assignment, I discovered that Bok Choy can be eaten raw like a salad - it’s like a very crunchy version of lettuce! 🥬 I took some small branches off the moringa shrub on the balcony, added some raw lotus root, threw in some activated nuts and dressed it a little with a blend of miso paste, rice syrup, lime and ginger. Accessing maximum nutrients from your food, done consistently, really makes world of difference to your wellbeing. I’m very thankful to my teacher @bonnycasel for sharing her wisdom with her students so openly.
