One of my creations from my most recent Healing Diets assignment. My course features western-centric ingredients and encourages students to explore what is available and accessible to them. It was fun to apply Malaysian flavour profiles to a week of soaking, blending, dehydrating, steaming, fermenting and other methods of retaining optimal nutrients. Here is Zucchini noodles with White Eggplant and jungle-foraged Split Gill Mushrooms (Cendawan Kukur / Kulat Sisir) in Turmeric Coconut Soup. Delish to the last drop!
