How’s everyone hanging in there? Malaysia’s going through its second round of the Movement Control Order and the lonesomeness is going to kick back in soon for many of us. The blessing in disguise is that we now have the opportunity to cook, cook, cook at home! All those photos and videos you save of recipes you’d want to try *at some point*? Dig ‘em all out and get busy! These beautiful Lebanese-style Stuffed Aubergines by @bosh.tv boys was something I pulled out of my own saved collection during the last MCO and it was heaven in a basket.
Based on my experience last year, the veggies that lasted well in my fridge (more than a week) were: 🌱Aubergines 🌱Carrots 🌱Cabbage (White and Red) 🌱 Beetroot 🌱Corn 🌱Bell Pepper 🌱Sweet Potatoes 🌱Tomatoes 🌱Turnip 🌱 Long Beans 🌱Cauliflower 🌱Chayote 🌱Pumpkin 🌱Snow Peas 🌱Luffa 🌱Eryngii (King Trumpet) Mushroom
These hardy veggies will help cut down on your grocery trips. If you have any recommendations of your own, drop them in a comment below too!
May we all stay healthy, safe and sane during these crazy times!
