I felt like making Malaysian-style ‘Potong’ ice cream but couldn’t decide whether to make Adzuki Bean or Mung Bean flavour... so I did both! Made with soaked and cooked beans, coconut cream, sugar and a pinch of salt, plus a bit of tapioca starch for a bit of richness. I love that these popsicles are refreshing, packed with protein and fiber, and fill you up like a wholesome snack should.
