In spirit of Ramadan, I made this Hericium Mushroom Sweet Potato Rendang. I got some non-vegans to try it and they loved it! Rendang, like a lot of other soul foods, take a lot of time to make, and a lot of love too. In a world that is slowly being taken over by fast food and all things processed, I hope we never lose that part of our culture that pours passion and patience into the food that comes out of home kitchens, to fill the stomachs and hearts of our loved ones in a way that something straight out a box could never achieve. I hope my friends who are fasting this Ramadan are having a peaceful, self-reflective time.
