Moringa powder is quite a strong-tasting product and if you’re clueless on how to incorporate it into your diet, I don’t blame you! However, moringa complements matcha very well, and I’ve incorporated both into these cookies which are delightfully soft and gluten-free. There’s also a chewy element courtesy of homemade caramel, and the rich bitter tones of crunchy cacao nibs. Oh Lordy. I’ve made a meal out of eating just these. Please don’t do that.

🍪MATCHARINGA COOKIES WITH CACAO NIBS AND CARAMEL🍪

INGREDIENTS:
For the Cookies
🌱2 tsp matcha powder
🌱2 tsp @organicule’s Moringa Powder
🌱1 cup desiccated coconut, blended into a flour
🌱2 tbsp Bob’s Mill Egg Replacement + 4 tbsp drinking water
🌱1 tbsp chia seed + 3 tbsp water
🌱1/3 cup pumpkin seed, blended into a butter or fine paste
🌱1/4 cup virgin coconut oil
🌱1/2 tsp vanilla paste
🌱1 tsp baking powder
🌱1/4 cup brown sugar
🌱1/4 tsp Himalayan pink salt
🌱@organicule Cacao Nibs to sprinkle

For the Caramel
🌱2 tbsp vegan butter or coconut oil
🌱3 tbsp agave nectar
🌱2 tsp arrowroot powder
🌱1/4 tsp vanilla paste or essence

METHOD:
Preheat your oven to 180 degrees Celsius.
Incorporate all cookie ingredients together into a dough (except for cacao nibs).
Take about a flat tablespoon of dough, roll into a ball and then flatten gently between palms into a small disc. Place into a baking tray lined with baking paper. Repeat until all the dough is used up, leaving about 2cm in between each cookie.
Bake for 12 minutes, flipping the tray around at the 6-minute mark to allow for even baking.
Remove from oven and allow to cool.
Mix all caramel ingredients into a small cooking pot. Cook on medium heat, stirring constantly. When you see the mixture starting to bubble, cook for another 2-3 minutes. Keep stirring to prevent the caramel from burning.
Remove caramel from heat. You will now need to work with it while it is still hot so be careful!
Dip a spoon into the caramel and drizzle your cookies in a zigzag motion.
Sprinkle cacao nibs on top of the caramel.
