A last-minute potluck idea that turned out to be a hit! I had just come back from some travels and my fridge was devoid of anything fresh, aside from an old pomegranate! Digging through my freezer though, I found Hericium mushroom, plus some Japanese items like chuka wakame (seasoned kelp) and inari (fried tofu pockets) which I add to my homemade poke bowls. I steamed some brown rice, mixed in some brown rice vinegar and mayonnaise, fried the hericium crispy, crumbled some walnuts, assembled everything into something presentable and the final product even impressed me! Even when I feel like I don’t have enough ingredients at home, I actually constantly do, especially when they’re hiding either dried in the pantry or frozen in the freezer. A little resourcefulness goes a long way!
