Ah May Vegetarian Prawn Noodles AKA Hokkien Mee.
Vegetarian prawn noodles are like regular prawn noodles, but instead of real prawns, they use mock prawns (plant based). So, it's a delicious noodle dish that's friendly to people who don't eat meat.
This dish is super simple to make.
Main ingredient of course is the prawn. Get fresh noodles and kway tiao from the supermarket or wet market. Wash the noodles and kway tiao seperately.
Stir fry all the ingredients you want and add noodles first (fry abit), follow by kway tiao to prevent kway tiao getting too soggy.
Add 2 bowl of hot water to noodles to make it wet wet and season to the taste you want with salt and vegetarian oyster sauce.
Serve hot! To note if this dish is being cooked too long, it will become over cook in a way that noodles will break easily.
