Say NO to killing! Say NO to shark's fin soup!
Here is my vegetarian version of sharkfin soup.
Ingredients: 1) Shark Fin Melon (Boil and shred with fork) 2) Winter Melon ( shredded) 3) Shredded Carrots 4) Shredded Shitake Mushrooms 5) Enoki Mushrooms 6) Black Moss Hair ( Optional )
Seasonings: 1) Mushrooms stock or Vegetarian Oyster Sauce 2) salt and pepper 3) Vinegar
Thickening: 1) half bowl of potatoe starch
All the above are up to you to adjust the amount you want. So I did not specify any quantity beside it. And you can get them in the supermarkets.
Just boil a pot of hot water and throw allt he ingredients in. When cook, add in the seasoning.
Taste it and when you get the required taste, please turn to medium heat, and stir in the corn starch gently. Reason is you do not want jelly clumps in your shark fin soup.
Taste again. If all is well, serve with vinegar and pepper. If not good enough, just season it to the taste you like.
Just make sure you taste it while the soup is cool. Dont burn your tongue... I realise tasting the soup while it is hot, your taste is blander. And you tend to add more seasoning and it became salty. So, be patient... taste it when it is cool...
