Holy Plating Skills, Batman! This is a tempura sushi dish inexplicably named Global Warming Maki. It is plated with a sauce illustration of lotus pods, which gave it a touch of zen. The tempura batter is thin and light and not greasy, and the dynamic contrast between the crispy batter and the warm, almost glutinous, rice makes this dish very moreish. A goodly handful of finely cut carrot, pickled daikon radish and kyuri added texture and natural flavours. There are many ways in which a tempura maki could have gone wrong but Sushi Kitchen didn’t go down any of those paths. The vegetables remained firm and crunchy and the rice was not gooey or oil-soaked. The various flavours and textures went really well together.
