[VEGETABLE PANCAKE with Swicy Dipping Sauce🌈🤤
Ingredients: - 2 cup assorted vegetables, julienned (I used mushrooms, sweet potato, eggplant and cilantro) - 3/4 cup all purpose flour - 3/4 cup water - salt to taste - 5-6 piece @pinxinvegan Kimchi - cooking oil
Steps: 1️⃣Mix all the vegetables in a large bowl and a pinch of salt.
2️⃣Add flour and water gradually.
3️⃣In a non-stick pan, heat up 2-3 tbsp of oil over medium heat.
4️⃣Pour the 1/2 of the mixture into the pan and spread evenly to make a flat thin pancake. Pan fry for 2-3 minutes until browned and crispy.
5️⃣Flip carefully and fry the other side for 2-3 minutes until browned and crispy.
6️⃣Turn off the heat and serve. _ *️⃣Dipping sauce: Mix 2 tsp @pinxinvegan Swicy Chili, 3 tbsp brown rice vinegar, 1 tbsp soy sauce and 1 tbsp minced garlic.
