Eggless Ladyfinger Biscuits🤤
Pale, slightly risen and sweet. This sweet sponge biscuit is traditionally made with egg to give it that airy body texture. But I wonder if that can be achieved with other ingredients 🧪🧫 Maybe by whipping the butter until it is light and fluffy to add that body to the Ladyfingers instead of egg 🐣❌. And it works🎉 These egg-free Ladyfingers are a little bit more flaky and delicate but they are also spongy, soft and crisp, perfect to be dipped into coffee then layered between lovely sweet vegan mascarpone mousse 😻
I also made the vegan mascapone mousse with homemade cultured cashew cheese. Experimenting in the kitchen is fun 🌋🌋🌋
