Nasi lemak or fragrant rice cooked in coconut milk and pandan leaves ππΏπ I also added star anise and cinnamon stick for a more complex flavour and fragrant. Feel free to skip them if you can't find them.
Makes 5-6 servings
Ingredients:
4 cup rice, rinsed and drained twice
2 pandan leaves, knotted
4-5 slices ginger
2 stalk lemongrass, bruised
6 cup freshly squeezed coconut milk (or 500g coconut cream dilute with water until 6 cups)
1 cinnamon stick
2 star anise
4 shallots, sliced
2 tsp salt
