LUNCHBOX idea: Mala Tofu with vegetable rice

Ingredients:
1 cup rice, cooked
1 stalk choy sum, chopped roughly
2 tbsp frozen sweet corn
2 stalk spinach
Few slices carrot
1 baby sweetcorn
2 pieces organic firm tofu, cut into 4 cubes
1 tbsp minced garlic
1/2 tbsp mala sauce
1/4 cup water
1 tsp sesame oil
1 tsp soy sauce

🍚Rice: Stir fry chopped choy sum and frozen sweet corn with 1 tsp sesame oil and soy sauce. Mix with cooked rice. Set aside.

🥕Vegetables: Blanch spinach for 30 seconds. Mix with sesame oil, 1 tsp sesame seeds and salt. Blanch carrot and baby sweet corn for 3 minutes. Set aside.

🧄Mala tofu: Pan fried tofu with 1 tsp sesame oil until both sides are browned and crispy. In a pan, saute minced garlic until fragrant, add premade mala sauce and tofu. Stir until even then add water and simmer until the sauce is thickened. Turn off the heat and serve.

Assemble everything together in your favourite lunchbox. Enjoy!
