Noodles in black sauce or Jjajang myeon literally means fried sauce noodles.
The sauce is made with fermented wheat and soy bean. It tastes quite bland and has a little bitterness. Usually, pork belly fat or pork lard is use to to fried the sauce to give it that fat and aroma. However in this vegan version, I used shallot oil to create the same effect. Even though it may not be exactly the same, you still get that fat and pungent aroma, which I love a lot!
I have been searching for the right jjajang myeon noodles but only manage to find this flat noodles which is a quite similar thing but not as chewy. Despite that, I do think this is quite a successful vegan version of jjajang myeon.
