Made this EASY laksa with my homemade sambal 🍜😋
Ingredients: Makes 2 servings
2 servings of noodles
oil for cooking
Broth
- 3 tbsp vegan sambal of choice (or make my sambal recipe link in comment)
- 3 tbsp curry powder
- 2 tomato, cut into wedges
- 800ml water
- 3 stalks curry leaves, removed stem
- 100ml coconut milk
- 2 tbsp vegetarian oyster sauce
- salt to taste
Toppings
- 1/2 eggplants, cut into wedges
- 2 lady fingers, remove head and halved
- 4-5 long beans, cut into 2 inches sticks
- mung bean sprouts, boiled or raw
- 4 fried soybean puffs, boiled
