I remember the first time I had Eomukguk at a bus station. It was winter (so freaking cold) and I was sipping the hot flavourful broth straight from the paper cup (yes they serve it in paper cup), it became one of the most memorable moments of my Korea trip 😽🇰🇷

This was a Korean dish that I missed a lot but I have never seen any vegan version of Eomukguk. Finally decided to make it myself and after many adjustments, the recipe is here for you now! 😋
