阿嬤辣椒 Ah Ma's Hot Sauce 🔥🌶️🧄
Ah Ma "commanded" us to balik kampung and make her signature hot sauce so I thought why not shoot the process as a documentation of my family tradition 💡 My parents gathered all the ingredients from NSK (wholesale market) and we departed from KL to Seremban. Within 2 hours, they whipped up 10 jars of hot sauce under my Ah Ma's guidance. Talk about efficiency!
We were batch making the hot sauce (about 10 glass jars) so feel free to adjust the amount if you don't intend to make so much 🫙
Make sure to clean all the ingredients by soaking and rinsing them in water 💦
🔪 INGREDIENT: (1:1:1:2) 1kg garlic cloves, peeled 1kg galangal roots, rubbed off the skin and chopped 1kg green bird's eye chilies 2 kg red chili peppers, chopped 3-4 cups of water to aid blending
🧂 SEASONING (these measurements were eyeballed aka agak-agak, so please adjust to your liking ya) 1/2 cup white sugar 1/4 cup salt 2 cup Calamansi lime juice (remove the seeds) Add vinegar if you like it more acidic 🍋
Blend everything until smooth. We did not have a big blender jug that would fit everything so we blended the ingredients separately with the aid of some water and lime juice. We did the same for salt and white sugar so they had well dissolved before being added into the sauce. Finally, mix everything together with a ladle until well-combined.
Transfer the hot sauce into clean jars and let them sit in the fridge overnight, allowing the flavours to infuse ❄️
