For many years, I didn't quite understand why people liked kimchi until I ate a homemade version from a friend of a friend. Suddenly my view on kimchi changed! I actually enjoyed eating it. And then I started making my own kimchi and realised that I could flavour it the way I liked it, ferment the way I liked it and also make raw vegan versions that didn't need to use fish sauce or make a porridge mixture.
