Vegan Chickpea Curry
This recipe was inspired by Vegan Richa but I wanted to make mine slightly more towards the raw side so there are a lot of raw elements in it. Here's what I did!
⭐INGREDIENTS 1 cup of dry chickpeas 4 shallots 4 cloves of garlic 1 inch knob of ginger 1 teaspoon Shaury’s vegetarian curry powder ½ teaspoon garam masala ¾ cup freshly squeezed coconut milk ¾ cup water 1 red bell pepper, sliced 1 carrot, medium dice and steamed 1 calamansi lime, juice Red chilli flakes, ground Daun selom, chopped Purple cabbage, finely sliced Salt & pepper to taste
🔪METHOD Soak dry chickpeas for 8 hours. Drain. I boiled the chickpeas in my Thermomix for 25 minutes. Drain. Mince shallots, garlic and ginger in Thermomix. Add inn curry powder and garam masala. Add in chickpeas. Add in coconut milk and water. Cook in Thermomix for 10 minutes at 45 degrees Celsius. Squeeze in lime juice. Season with salt and pepper. Top with red bell pepper, carrot, selom and purple cabbage. Serve. 😋😋😋
