Fluffy Vegan Pancakes! (cooked)🥞🥞🥞

A few days ago I asked if what's your favourite vegan pancake recipe as the one I tried from Tasty wasn't that fluffy. @bee_bee_ong kindly shared her go to recipe from Allrecipes.com 🙏

I used that as a reference, tweaked it a bit because I don't use white sugar any more and since I had some coconut milk with me I included that as part of the liquid. It turned out really good and fluffy! This is even better as there's less ingredients in the basic pancake recipe. Thanks so much Reese for sharing. 😀

Here's what I used:

🔸1 1/4 cups 100% Stone Ground Whole Wheat Pastry Flour from @bobsredmill
🔸2 tablespoons @gulamelts coconut nectar sugar
🔸2 teaspoons baking powder
🔸1/2 teaspoon Himalayan salt
🔸1 cup water
🔸1/4 cup coconut milk
🔸1 tablespoon organic extra virgin coconut oil

Served with:
🔸@gulamelts coconut nectar - drizzle it on!
🔸sliced bananas
🔸coconut flakes
🔸mint leaves
🔸cacao nibs from @bigtreefarmsbali @diet.angel
🔸walnuts

Note: I generally don't use white flour but since I was given free samples of it, I thought I'd try it out. I think I ate about 3 of the pancakes just to see how they tasted (really good!) and then gave the rest of Mr Jazz Guitarist to eat. He happily ate the entire stack with so much joy! My lunch was raw vegan burgers with raw purple cabbage, hehe.😬😉😇
