RECIPE: Plantain Pancakes (raw vegan), recipe adapted from @vegannigerian. đĨđĨđĨ
Since Tomi has a plantain pancake recipe, I was wondering if I could make a raw vegan version too based on the techniques of making raw vegan pancakes which includes blending, dehydrating and also the use of psyllium husk to make it kinda fluffy. It turned out really nice!
Here's what I did: INGREDIENTS
*Dry Ingredients* ÂŊ cup coconut flour from @bobsredmill 1 teaspoon maca powder from @organiculesuperfoods 1 teaspoon baobab powder from @organiculesuperfoods ÂŊ tablespoon golden flaxseeds from @bobsredmill , ground 2 tablespoons psyllium husk Pinch organic salt -đđđ *Wet Ingredients* 2 plantains, peeled and diced 1 cup hazelnut milk from @farmerly.com.my 3 tablespoons Masarang Arenga Forest Sugar syrup from @straitswholefoods 1 tablespoon Rainbow Vitality Enzyme from@straitswholefoods đĨđĨđĨ
METHOD Mix dry ingredients in a mixing bowl. Process wet ingredients in a food processor. Add in dry ingredients into food processor and blend till it turns into a typical pancake batter. Pour batter onto non-stick dehydrator sheets and dehydrate at 45 degrees Celsius until the tops are fairly dry. Flip over and transfer to mesh sheet and dehydrate until it reaches a pancake-like consistency. I used my @excaliburdehydrator.
I served mine with: - caramel sauce made from Masarang Arenga Forest Sugar from and nut milk from @farmerly.com.my - coconut flakes from Bob's Red Mill - cacao nibs from @organiculesuperfoods - strawberries, blueberries - dehydrated plantains just because I found it amusing to have plantains on plantains
