Spanish 1 Pot Stew - tried out the recipe by @avantgardevegan (Oil-free, Cooked Vegan)
Gaz's stew looked so delicious I had to try it out, so bought the ingredients from the TTDI wet market. Here's what I used:
1 Red Onion, sliced Omitted garlic though 2 Sticks Celery, chopped roughly (1 stick was cooked, 1 stick was raw) 1 Red Pepper, cubed (I kept this raw) 2 sweet potatoes, peeled & cubed - butternut squash is soooo expensive in KL so I just subbed with sweet potatoes 2 Potatoes, peeled, cubed Half a head of Cauliflower, cut into florets 2 tbs Smoked Paprika (his original recipe has 4 tablespoons, but I thot I'd keep it to 2 as I didn't want it to be too intense) 2 tsp Chilli Flakes 1 Lemon (this was a bit sour for me, so next time I'll use less) 1 Bay Leaf 1 cup/200g mung beans, rinsed - I didn't have red lentils so I subbed with this Tomatoes - can't remember how many I used...I don't like using canned tomatoes so I used fresh ones and chopped them up 1 cup/240ml water. I didn't have Vegetable Stock so I just used water and flavoured with some nooch and organic soy sauce delivered to me by @everleafstoremalaysia Pinch Salt & Pepper
Mr Jazz Guitarist didn't like the smell at all when it was cooking so I was a bit worried even though I loved the aroma but when it came to eating, he loved it. Phew. He even asked me to make it again. I popped in some raw celery and raw red peppers so there was at least some raw veggies.
