RAW VEGAN BURRITO
This one surprised me. I didn’t expect it to taste that good! The original recipe calls for collard greens but I couldn’t find them so I used romaine lettuce instead. Here’s my version:
INGREDIENTS:
For the burrito and filling: ~ romaine lettuce ~ daun cekur, finely sliced ~ belimbing buluh, finely sliced ~ carrot strips ~ purple cabbage, finely sliced ~ tomato, cubed ~ coriander leaves, finely sliced ~ birds eye chilli ~ calamansi lime ~ cayenne powder from @signaturemarket
For the RAWesomesauce! ~ Half a zucchini, cubed ~ ¼ cup hemp hearts from @organiculesuperfoods ~ juice of 3 calamansi limes ~ lacto-fermented juice (see my ebook Fun with Ferments on how to make this) ~ 3 lacto-fermented belimbing buluh (see my ebook Fun with Ferments on how to make this) ~ cumin seeds

For sauce: Blend all ingredients in a blender till smooth. I used my Nutribullet.
