THAI RED CURRY (cooked vegan)
So easy to whip up some red curry since I’ve made a batch of Thai red curry paste. Learnt how to make this from the Authentic Vegan Thai course taught by @baanthaifarmcookingschool via @veecoco_academy.
This was a tri-coloured potato curry using: ~ purple sweet potato ~ orange sweet potato ~ potato ~ long beans ~ chilli ~ coriander leaves ~ @greenpatchmalaysia microgreens
Perfect with the Siam Black Rice that I bought from @vegandistrictmy. I also added some white quinoa as well.
