RECIPE: MUSHROOM & APPLE STROGANOFF (high raw) - a dish inspired by @ethivegan.
I was super excited about trying out my friend’s mushroom stroganoff recipe by Edward, a vegan chef and author based in London. He made this dish for us when we stayed with him this spring/summer. I think it’s because the sauce kinda reminds me of a curry dish. Stroganoff is usually made with sour cream but he’s veganised it by making a cream out of hemp seeds and water. I didn’t have lemon so I used some sour passion fruit pulp instead to introduce the acidity to the dish. Please do visit Edward’s website for the original recipe. 😋😋😋
My take on it - I’ve only cooked the mushrooms and the rice, the rest of the ingredients are raw. The apple is in there because, hey, I have apples. They lent a nice crunch and sweetness to the dish.
🍏🍏🍏 MUSHROOM & APPLE STROGANOFF
For the sauce 100ml filtered water 40 gm hemp hearts from @organiculesuperfoods 1 long red chilli pepper, sliced 12 cherry tomatoes, cut into halves 2 tsp smoked paprika 100ml grape juice (original recipe is vegan white wine but I wanted mine non-alcoholic) ½ teaspoon Peppery Chanterelle Salt from @tevorah_foodaholic_empire ½ teaspoon Himalayan pink salt Passion fruit pulp from 1 passion fruit
2 tablespoons @marylebonegroup coconut oil spread 200g enoki mushrooms, cut into 1-inch 1 yellow apple, medium dice Freshly ground pepper Curry leaves
METHOD Blend all ingredients for the sauce in a blender till smooth. Saute mushrooms in coconut oil for 2 minutes in a large pan and remove from heat. Pour in sauce, add apple pieces and mix well. Top with freshly ground pepper. Garnish with curry leaves. Serve with unpolished brown rice.
NOTE: You could use any mushrooms, actually. I just used enoki cause it was local and ⅓ the price of swiss brown mushrooms or portobello mushrooms.
Also, I added curry leaves coz I have access to them from the garden. Free leaves! 😃
