RECIPE: Cauliflower Steak (raw vegan) by #RawChefYin🌶️
While absolutely raw cauliflower doesn’t agree with me, I love dehydrating them so they’re softer and easier to eat.
INGREDIENTS:
1 medium cauliflower
Tandoori Masala Spice
@mu.soysauce organic soy sauce
@cobybooch from @mr3cce
Onion salt from @traderjoes
1 mango, cubed
1 sprig of curry leaves
Celery leaves
Pomegranate
Pine nuts
Calmansi lime
Chilli flakes

Cut cauliflower into steak-like pieces. Mix masala spice, soy sauce, kombucha, and onion salt to form a paste. Rub onto cauliflower steak. Leave to marinate for 1 hour. Place on non-stick sheet and dehydrate in @excaliburdehydrator for 2 hours.
Mix pomegranate, curry leaves, pine nuts and mango cubes together for a side dish.
Add celery leaves, more mango cubes and lacto-fermented belimbing buluh to the cauliflower steaks. Squeeze calamansi lime juice on top of cauliflower.
Take photos. Serve and enjoy!
