RICE + GRAINS + PULSES: CHICKPEA SOCCA 😃😍💚😋🙌💯
Since I don't have a working stovetop, I turned this into a high raw dish instead. Sprouted chickpeas, made a raw pancake batter and dehydrated them. Wanted to keep the aioli and romesco oil-free so used avocado from @misteravo as the fat instead of olive oil and used @snappeafood plant-based milk as the liquid.
Served it to Mr Jazz Guitairst @azsamad for lunch and his first reaction was "Eh, this tastes like Matthew Kenney food." So I guess it's a great success
I remember eating this cast-iron chickpea socca at @xyst in New York City, very glad to be able to learn how to make it and then convert it into a raw vegan version 😃😍💚😋🙌💯
