RICE + GRAINS + PULSES: SAFFRON RISOTTO 💚😋

I used Calrose rice as I couldn't get any of those listed on the list. Also couldn't get golden beets so substituted with red beets instead. I added in the beets last to make sure I don't get a pink risotto hahaha although that would be pretty cool, huh? 😃

Beautifully done! Your risotto has a good creamy consistency and a beautiful vibrant color. The golden beets really make your dish pop too. Pink risotto would be pretty cool...maybe for a valentines dinner! :)
