FLUFFY MANGO PANCAKES (raw vegan)
I hate raw vegan pancakes that aren’t fluffy. I remember eating a pancake at this well-known raw vegan place in the US and it tasted like cardboard. Would have gladly shared my recipe with them if they had asked so that non-vegans don’t get the wrong impression of raw vegan food.
What’s the secret?
2 things.
💚Firstly, there needs to be a fermented element in the pancake to give it the light, airy feeling. I used kombucha.
💚Secondly, watch the pancakes carefully in the dehydrator. Don’t overdehydrate. It’s hard to give you the exact timing for dehydration as there are so many factors that come into place - the temperature of your kitchen, the humidity in your kitchen, the brand of your dehydrator and the model of your dehydrator.
What I do is check on my pancakes every hour and the moment they are ready to flip, I flip them. And then I check on them diligently as well so that when the surface is dry but the insides are still moist and fluffy, they’re immediately removed from the dehydrator. 🥞
