SHALLOW FRY LESSON: EMPANADA ๐Ÿ’š๐Ÿ’ฏ๐ŸŒถ๏ธ๐Ÿ™๐Ÿ‘

Since I donโ€™t have gas supply to my stove top, I canโ€™t shallow fry so I decided to make a raw vegan version of this. We have a Malaysian version of the empanada called โ€œkaripapโ€ or also known as curry puffs and since Iโ€™ve already developed a raw vegan recipe for that, I used a similar recipe for the empanada dough. Itโ€™s basically oats, almonds, coconut flour, cashews, psyllium husk, and seasonings.

For the filling I used:
- orange sweet potato
- fresh turmeric root
- fresh ginger root
- chilli flakes ๐ŸŒถ๏ธ
- tomato ๐Ÿ…
- garlic
- leek
- salt
- coconut palm sugar
- leftover yogurt
- leftover raw vegan Japanese curry sauce made from scratch

Totally enjoyed it. Am half-wondering whether I want to make a sweet version using the strawberries that I have!
