SHALLOW FRY LESSON: EMPANADA 💚💯🌶️🙏👍
Since I don’t have gas supply to my stove top, I can’t shallow fry so I decided to make a raw vegan version of this. We have a Malaysian version of the empanada called “karipap” or also known as curry puffs and since I’ve already developed a raw vegan recipe for that, I used a similar recipe for the empanada dough. It’s basically oats, almonds, coconut flour, cashews, psyllium husk, and seasonings.
For the filling I used: - orange sweet potato - fresh turmeric root - fresh ginger root - chilli flakes 🌶️ - tomato 🍅 - garlic - leek - salt - coconut palm sugar - leftover yogurt - leftover raw vegan Japanese curry sauce made from scratch
Totally enjoyed it. Am half-wondering whether I want to make a sweet version using the strawberries that I have!
