ENCAPSULATED FOODS LESSON: KIMCHI DUMPLINGS
My submission to @foodfutureinstitute "Have always loved these signature MK kimchi dumplings!
I couldn't get hold of coconuts though - was half thinking if I could make the wrappers with bananas + apples instead?
In the end, I used raw nori sheets. Which meant I couldn't shape them very well.
I don't have xantham gum either so the puree didn't thicken up.
I enjoyed the gyoza lesson the most simple because I love to eat gyoza. And the miso mustard glaze was out of this world!"
INSTRUCTOR FEEDBACK "This dish is so vibrant! Nori is a great substitute! You have a good amount of filling. Your puree has a beautiful colour, but be sure to blend it a bit further for a smoother consistency. You can add a bit more lecithin to the foam in order to maintain stability and for it to become frothier. Be sure to only skim off the bubbles and it is perfect. Lovely choice of garnish, it looks so minimal! Can't wait to see your next dishes!"
