🥥Coconut Barfi INGREDIENTS 1 cup freshly grated coconut 2 tablespoons coconut syrup from @loveearthorganic 2 tablespoons cocoa butter, melted from @bennsethicoa.my ⅛ teaspoon French sea salt from @loveearthorganic ½ teaspoon butterfly pea powder from @mybluetea 1 teaspoon pandan powder from @mybluetea 1 tablespoon almond flakes Edible silver leaf (optional)
METHOD ~ For The Base Place coconut, coconut syrup, cocoa butter and salt into a mixing bowl and mix till well-combined. Divide into 2 equal portions.
💙For Butterfly Blue Pea Coconut Barfi💙 Add butterfly pea powder into one portion and mix till well-combined and blue colour is even. Shape into squares using a pastry cutter. Place in freezer till firm. Cut into 4 pieces. Decorate with edible silver leaf if preferred. Store in fridge and serve chilled.
💚For Pandan Coconut Barfi💚 Add pandan powder into second portion and mix till well-combined and green colour is even. Fold in almond flakes. Shape into squares using a pastry cutter. Place in freezer till firm. Cut into 4 pieces. Store in fridge and serve chilled.
