Gone are the days when raw vegan cakes were basically frozen cashew cream blocks.
These red velvet babies have a nice spongy texture that is much closer to traditional baked cakes. π°
The secret?
Grated beetroot, zucchini and psyllium husk.
Made these for Mr Jazz Guitaristβs birthday and heβs a happy (grown-up) man. π
