💚Green Pea Cookies are very popular during Chinese New Year in Malaysia where I live. But I don’t want to have any white flour coz it makes me sick. So I made these instead!
INGREDIENTS 3/4 cups sprouted buckwheat 3/4 cup @organicule pumpkin seeds 1/2 tsp @my.blue.tea pandan powder (sub with vanilla extract) ½ tsp @my.blue.tea kaffir lime leaf powder ¼ tsp @organicule spirulina powder 1 teaspoon miso paste from @melindasoon 1 teaspoon lucuma powder 1-2 tablespoons liquid sweetener of choice - coconut nectar, maple syrup. I used @gulamelts 2 tablespoons water
METHOD Place all ingredients except liquid sweetener and water into food processor and process till flour-like consister. Add liquid sweetener and water into food processor and process till it turns into a pliable dough. Measure out 2 teaspoons of dough and roll into balls. Use chopstick to create pattern on top. Place onto non-stick dehydrator tray and dehydrate at 45 Celsius for 1.5 hours.
