Was initially planning to make an apple pie smoothie for lunch but since my Veggies My delivery arrived before 11am, I decided to make a giant salad instead.
Managed to get in 450 g of greens into this salad! 💪

For dressing: I just got hold of Lissa’s eBook “Plant-based Dips & Dressings” so I made her Thai Coconut Curry sauce. Ooops, I was supposed to use more water but I forgot. I still liked it though 😆
